Week 16 (belated) - Vacation food!


A belated post to share all the yummy food from St. Thomas!

Breakfast buffet: Egg white/spinach scramble on whole wheat toast with ketchup; watermelon; oatmeal with cinnamon, raisins, dried cranberries + dried apples; and orange juice (recent craving!)


Complimentary sparkling cider + cheese and crackers!


Short ribs with truffle mashed potatoes, mashed carrots, brussel sprouts and absolutely delicious jus!


Fish tacos - sooooooooooooo good!
(With a side salad featuring shaved fennel and a lovely lavender mustard vinaigrette!)

Week 16 - Bean salads


So easy!
Chickpeas, Trader Joe's mirepoix, red wine vinegar, touch of flavored olive oil, salt and pepper!
(Could mix it up with black beans, kidney beans or any other kind of bean.)
